Country Casserole Recipe

A firm family favourite, this meal is enjoyed by adults and kids alike.

Ingredients

  • 1 lb potatoes
  • 1 lb leeks
  • 1 tbsp oil
  • 1 x 1 ½ pint packet of oxtail soup
  • 1 pint water
  • ½ lb carrots
  • 1 medium size onion
  • 1 lb beef chipolate sausages

Instructions

  1. Peel potatoes, cut into half inch dice
  2. Scrape carrots, cut into sticks
  3. Cut leeks into ½ inch slices
  4. Peel and slice onion
  5. Fry sausages in oil
  6. Place in 3 pint casserole
  7. Lightly fry vegetables and add to sausages
  8. Prepare soup mix using 1 pint of water only
  9. Bring to boil and pour over casserole
  10. Cover casserole and cook for 1-1 ½ hours at 350 degrees F, 180 degrees C, or until vegetables are tender

Serve in a bowl together with crusty wholemeal bread
