Quick & Easy Healthy Tuna Melt RecipeThis healthy tuna melt is perfect as a quick snack recipe

This tasty & low calorie version of the classic tuna melts can be cooked in 5 minutes or less !

If you're used to thinking of tuna melts as off the menu for your diet, think again.

This light and healthy low fat update of the classic tuna melt features whole-wheat bread and sharp cheddar cheese for a low calorie lunch or snack and is quick to create in any kitchen.

Ingredients

  • 185g tin of tuna (in brine, not oil)
  • 1 bunch spring onions or shallots
  • 2 tbsp low fat mayonnaise (Hellmans is great)
  • 1 tsp prepared mustard (not strong tasting)
  • 2 tomatoes
  • sliced whole wheat (or wholemeal) bread or 4 rolls (or baps)
  • a handful of grated strong Cheddar cheese
  • salt and ground black pepper to taste
  1. Slice the bread rolls in half.
  2. Mix the drained tuna with 1 chopped spring onion.
  3. Mix with mayonnaise & mustard
  4. Part toast the bread, but do not brown
  5. Spread the tuna mix to the edges of the warm toast
  6. Sprinkle cheese lightly over the top
  7. Toast under a grill until browned
  8. Enjoy served warm !

 Tips & Variations 

For kids - add chopped red pepper, for extra nutrition & vitamins. 

In summer,  try adding a small amount of chopped items from the salad part of your refrigerator, e.g. celery, green peppers, olives, avocado.

For a winter warmer, replace tuna with chopped cooked bacon, for a tasty snack.
