Heather's Fruity Coleslaw Recipe

Ingredients

  • 12oz white cabbage
  • 4oz carrots
  • 4 spring onions
  • 1 small green pepper
  • 2 small red crisp eating apples
  • grated rind of 1 lemon
  • 4 tbsp reduced fat mayonnaise
  • seasoning
  1. Cut best leaves from cabbage
  2. Shred finely & place in bowl
  3. Scrape and grate carrots
  4. Add to bowl
  5. Trim off ends of onions and slice thinly
  6. Add to bowl
  7. Wash peppers, remove core & seeds
  8. Dice peppers and add to cabbage
  9. Cut the apples in quarter
  10. Remove core and dice into pieces
  11. Add to bowl
  12. Stir all ingredients and place in a salad bowl

Serve at a barbecue, or as an accompaniment to a main meal

Although this recipe includes mayonnaise, the amount of fats in any one portion are not very high and it is full of fresh vegetables and vitamins.

If you have children who don't like to eat their veg, this is a great way to get them to enjoy eating them.
