Mixed Vegetable Pie recipe

This is a handy recipe if you've got a lot of vegetables in the fridge, but aren't sure what you can make with them.

It's also a handy meal to cook ahead and cook later in the oven (although you'll need to add around 10 minutes to the cooking time for it to warm through thoroughly).

Mixed Vegetable Pie 

Making time   25 minutes

Cooking time   20 minutes

 

Ingredients

  • 500g / 1lb mixed cooked vegetables (carrots, peas, beans, mushrooms, courgettes, etc)
  • 1-2 tomatoes
  • 1 hard-boiled egg
  • ½ pt cheese sauce
  • 500g / 1lb cooked mashed potato (can mixed half and half with mashed sweet potato for a healthier option)
  • 1 tbsp grated cheese
  • ½ oz butter or spread

 

 

v      Mix the vegetables, tomatoes and egg together with the sauce.

v      Put into a fireproof dish and cover with the potato

v      Sprinkle with grated cheese and dot with butter

v      Bake for about 20 minutes in a moderately hot oven at 375 ° F, GM5

 

If you like you can spice this up a little by adding a little chopped, cooked bacon.

 

For the vegetables, you can use just about anything you've got in the fridge or larder, as long as the flavour isn't very strong.

 

Choosing vegetables which have a low glycemic index (GI)is far better as part of a diabetic diet, than higher GI foods.
