This is a quick and easy recipe to make in a hurry, especially as you'll probably have some eggs in the fridge already.

Whilst it's helpful to have an omelette pan, you can use any small to medium size non-stick pan.

If you don't yet know how to cook a omelette, now might be the time to try.

Despite rumours that eggs may increase cholesterol, they are a cheap source of protein which, when eaten in moderation, will help create a balanced, healthy diet.

Ingredients

  • 2 eggs
  • 1tbsp butter
  • Salt & pepper to season
  1. Whisk the eggs, but don't overdo it
  2. Add the butter to a hot pan
  3. Pour in the eggs.
  4. Stir gently with the back of a fork, gradually drawing the mixture in from the sides of the pan
  5. When the egg is set, set fork aside
  6. Cook for one more minute
  7. Fold into three
  8. Serve

This tastes lovely served with warm granary or wholemeal bread.

If you like, you can add tomato, mushrooms, herbs, chopped ham or cooked bacon to the mixture before cooking, to ring the changes.

Whilst we all have different tastes and preferences when it comes to our food, here's what our family consider to be the best omelette recipe :-

Spanish Omelette

Ingredients

  • 6 eggs
  • 1 onion (preferably red)
  • 300g cooked new potatoes
  • 100g mushrooms
  • 3 tbsp olive oil
  • salt & pepper to season
  1. Heat oil in a frying or omelette pan
  2. Chop and fry onion until soft
  3. Add potatoes and mushrooms and fry gently for 3-5 minutes
  4. Beat eggs, adding salt and pepper to taste
  5. Add to pan and cook gently until almost set, roughly 5-10 minutes
  6. Meanwhile, heat grill
  7. Place pan under grill for 2-3 minutes to cook right through
  8. Serve hot, cut into slices
