Hot Potato Salad with Chicken & Spinach Recipe

Ingredients

200g chopped bacon or lardons 
1-2 tbsp olive oil
500g salad potatoes , cleaned
200g cooked chicken breast (though regular chicken is fine too)
100g Baby spinach
4-5 tbsp Honey & Mustard dressing

  1. Fry the bacon in the olive oil until cooked through
  2. Boil the salad potatoes until just cooked
  3. Drain potatoes
  4. Add to pan with bacon for five minutes until coated
  5. Cut chicken into small bite-sizes pieces
  6. Stir into bacon & potato mixture
  7. Place spinach in a family size salad bowl
  8. Add the potato mixture
  9. Pour over dressing
  10. Serve !
