Of course, summer & sunshine bring the barbecue season, with the opportunity to eat outdoors and enjoy grilled meats, and the fun of grilling with friends and family.

Fed up with years of limp lettuce and uninspiring cucumber?

If for you the word salad is unwelcome, maybe it's time to take a few tips from the French, Italian and the Greeks.  This is an authentic Greek salad we were offered in Athens, capital city of Greece

Those living in the warm climes around the Mediterrean virtually live on fresh salads, full of nutritious ingredients, and it's acknowledged that their Mediterranean diet does mean that they live longer.

Naturally low in carbs, this kind of food is a tasty & healthy option for anyone with diabetes who needs to control their blood sugar levels.

So, don't worry about lettuce - but have a look in the chiller cabinet for a range of other fresh leafy offerings - from baby spinach to rocket leaves - these all have additional flavour and add interest.

Why not try adding some of these classic ingredients:-

  • olives
  • cubed feta cheese
  • thinly sliced tomatoes
  • oven roast vegetables (zucchini, aubergine)
  • chunky slices of cucumber
  • grated cheese

Easy Grill Recipes for your Barbecue

Lazy summer days, the smell of hot coals and meat grilling on the barbeque - it's what sums up the best of what we love about this season.

What could be easier than throwing a few burgers, chicken pieces and  ribs together with a marinade, then quickly cooking over open flames?

There's something natural and enjoyable about eating outdoors during the warmer weather, and it's a great time to invite family and friends around.

 

Homemade Chimi Churi Recipe

This is a great marinade that is popular in south america

Ingredients:-

  • 1 large onion
  • 1pt vinegar
  • ½ tub dried peppers
  • 2 sachets bouquet garni
  • 6 chilli peppers (dried)
  • 1/3 packet garlic salt
  • 2 pints oil
  1. Boil all ingredients together, except oil, for five minutes
  2. Cool and add oil
  3. If you have time, marinade your meat overnight

This recipe makes sufficient for several barbecues or one large event.

Quick Summer Smoothie

For a real taste of summer in a jiffy, whip up some fresh strawberries and yogurt in a blender, with a little crushed ice - the ultimate taste of summer !
