Vegetable Curry Microwave Recipe

Microwave Recipe for Vegetable Curry


Making time 15 minutes

Cooking time   15 minutes



2 tbsp sunflower oil

225g 8oz onion, sliced

1 clove garlic, crushed

1 spoon curry paste (approx.)

397g 14oz can chopped tomatoes

1 large potato, cubed

225g 8oz cauliflower florets

2 tbsp lemon juice

Put oil, onion and garlic into a microwave proof bowl

Cover and cook for 5 minutes

Add curry paste and chopped tomatoes

Cook for 5 minutes

Stir in potato, cauliflower, lemon juice and seasoning

Cook for 15 minutes or until vegetables are tender

Spoon into serving bowl

Serve with yogurt, pickles and naan bread.
