Sweet Potato Wedges

This is a variation on the traditional potato wedge.  Easy to prepare ahead and then simply pop in the oven 20-25 minutes before you want to be ready to eat.


  • 2-3 large sweet potatoes
  • olive oil
  1. Slice sweet potatoes into finger size wedges
  2. Pour over olive oil & toss in oil until coated
  3. Bake in over for 20-25 minutes until soft and browned slightly
  4. Enjoy served hot

Variations on this recipe - add freshly chopped garlic or ½ chopped onion when tossing wedges in oil.

Serve with with low fat dips, such as a sweet chilli dip.
