Warm Avocado, Bacon & Bean Salad

Cold salads are the perfect accompaniment to any main meal during the summer months.

However, a hot salad, with the flavours infused, can be the perfect meal on it's own.

It's really easy to "throw together", once you've got the ingredients available - and you'll find that friends and family (particularly the kids) will be asking for you to cook this again and again!

Ingredients

  • 1 ripe avocado
  • 1 pack lardons (chopped bacon)
  • ¼ pack of baby spinach, washed
  • ½ tin of borlotti or cannelini beans
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  1. Fry the bacon, in a little olive oil, until cooked through
  2. Add the beans and fry through until warmed
  3. Put the spinach in a bowl
  4. Half the avocado
  5. Remove the stone and the skin
  6. Cut into slivers or chunks, whichever you choose
  7. Mix a tablespoon of oil and lemon juice together
  8. Top the beans with the bacon and then avocado
  9. Drizzle with the oil and lemon juice
  10. Grind over with black pepper

Serve immediately with fresh chunks of bread.

If you don't have lardons, fry strips of bacon, then cut up once cooked (it's much easier!)

You can try adding other things to this warm salad - or try it with any of your favorite salad dressings.
