Diabetic Muffin Recipes

These muffins can be made to be sweet (1/3c sugar) or savory (double salt, 1/4c sugar).


Optional: 1/2c cocoa, 1c blueberries, 1 banana, vanilla, cinnamon, jam in the center of the muffin

• 2 cups Almond Flour
• 2 tsp Baking Powder
• 1/4 tsp Salt
• 1/4 cup Greek Yogurt
• 1 cup Breakfree Egg Substitute
• 1/3 cup Water
• 1/3 cup Sugar
• 1/2 tsp Vanilla Extract


Mix dry ingredients together then add wet ingredients.
Pour into 12 well-greased muffin tins (or use paper liners).
Bake at 350 degrees for 15-20 minutes until done.
